Natalie’s belief is that food affects us on a mental, emotional, and physical level. A meal is not just about the food on your plate, but it’s own journey and source. This includes where food comes from and how it’s raised, to the intentions and mindfulness put into preparing and eating it. Join Natalie to discuss tips on sourcing ingredients more sustainably while also having a blast in the kitchen making two of her signature breakfast meals: Baked Sweet Potato Eggs & Signature Breakfast Cookies.

INGREDIENTS & PRE-WORKSHOP FOOD PREP BELOW

Please purchase ingredients and prep sweet potatoes (as described) before Saturday!

BREAKFAST COOKIES

Ingredients:
2 Cup Rolled Oats
1 1/4 cup oat Flour (can be made with rolled oats in food processor)
1 tsp Baking Soda
1 tsp Baking Powder
2 tsp Cinnamon
1-2 tsp Salt
1 Tbl Chia Seeds Ground
1 Cup Nut butter
8-10 Medjool Dates
1/2 Cup coconut oil
1/4 Cup Maple Syrup
1 Cup Pumpkin Puree
1tsp Vanilla
1/2 Cup shredded coconut
1/2 Cup Pumpkin seeds
1/2 Cup Pecans

Supplies:
Food Processor (you can also hand mix but it’s more tedious)
Rubber Spatula
Bowl
Dry Measuring Cups
Wooden Spoon
Baking Tray
Parchment
Cookie Scoop / Spoon

BAKED SWEET POTATO EGGS

Prep (to be done the night before):

1.Wash your sweet potatoes, with a fork put a few surface holes in the potatoes

2.Place them in the oven on 375’ for approx 1 hour or until very soft (put foil on the bottom of your oven to catch any drippings).

3.Let cool and leave in the fridge overnight

Ingredients:
4 Sweet Potatoes (choose a few different varieties. I like Japanese, purple, and orange sweet potatoes)
1 Dz Eggs (or however many will feed your household)
Chives
1 Avocado
Olive Oil
Salt & Pepper
*Optional: jalapeños & parsley

Supplies:
Sheet Tray or Baking Dish ~size depends on amount you would like to make or whatever you have in your home!
Cutting Board
Knife
Spatula
